Joni is a happy and healthy wife, mother, and grandmother in her fifties. However, that wasn’t always the case.
From the age of ten, Joni struggled with gastrointestinal symptoms, which was assumed to be irritable bowel syndrome. While pregnant with her first child, she was diagnosed with gestational diabetes, with a diagnosis of autoimmune hypothyroidism following about a decade later. The big 4-0 brought along degenerative disc disease, and a related neck surgery.
Joni spent all those years yo-yo dieting; always losing and re-gaining the same stubborn pounds. She tried everything: from diet pills to weight loss meetings, and even drastic things like hormone injections. Nothing offered a permanent solution to her weight problem, and everything Joni tried made her feel terrible.
In 2014, her son became engaged, and with a wedding impending, Joni decided enough was enough. She dug out an old low carb book, and immediately started following the diet. With a little taste of initial weight loss success, her interest was piqued, and her hope was rekindled. Joni began reading everything about the low carb lifestyle she could get her hands on, and quickly went full-on Ketogenic.
About three months into her journey, Joni recalls looking at her husband one morning and saying to him, “I don’t care if I don’t lose another pound, because I feel so good!” When her son’s wedding rolled around, not only had she reached her goal weight, her lifelong IBS symptoms were gone. For the first time in fourteen years, her hypothyroidism was stablized. Joni also discovered that she had so much more energy. Not wanting to squander her new-found energy and health, she made a commitment to walk every day, which turned into challenging herself to “jog a few mailboxes” along the route. It wasn’t long before she was training for, and running half-marathons.
Joni has been an acute care licensed practical nurse for over thirty years. She has nursing experience in Hospice, Oncology and Emergency Medicine. Though she no longer practices, she maintains an active nursing license. Today, Joni spends her time running, traveling, cooking, shooting, and teaching others about Keto. She lives in Georgia, with her husband and three miniature schnauzers.
